If you have all the time in the world to create delicious, gourmet meals each night then this post isn’t for you.

However if you have a full life and want simple, delicious, figure friendly meals for the entire family- read on. I made this dish last night and my guys LOVED it.

The best part besides being super easy and quick to make was that it helped me escape the Two Meal Mommy Trap .  I skipped the rice.  They didn’t and voila happy family.

Mediterannean Meatballs and Squash

Ingredients:

  • 1.25 pounds 93% Lean Ground Turkey
  • ½ package McCormick Chicken & Potatoes Seasoning Mix
  • 5 squash (mix of zucchini and summer squash)
  • 1 cup brown rice
  • 2 cups water
  • Olive Oil
  • Lawry’s Seasoning Salt
  • Salt

Directions:

  1. Season the turkey meat with Lawry’s Seasoning Salt then add the contents of the flavor packet.
  2. Mix the spices evenly into the meat.
  3. Use a tablespoon to scoop out enough meat for individual meatballs.
  4. Roll each meatball and place it on a dish.
  5. Heat your skillet on high heat then add meatballs to the skillet.
  6. Allow meatballs to brown for 1-2 minutes.
  7. Add just enough water to coat the bottom of the pan and reduce heat to medium.
  8. Cook until meatballs are done all the way through (about 8 minutes).
  9. After you reduce the heat on the meatballs, add 1 cup of rice and 2 cups of water to a rice cooker.
  10. Turn rice cooker on and wait for rice to cook.
  11. Wash and slice the squash.
  12. Put just enough olive oil in a skillet to coat the skillet and turn on medium heat.
  13. When the skillet is warm, add the squash to the skillet.
  14. Stir frequently and remove from heat when the squash is soft.
  15. Add salt to taste.

 

The squash, meatballs, and rice should all be done at nearly the same time.  Enjoy the meatballs and squash alone if your meal doesn’t require any starchy carbs or serve over the rice if you need carbs with this meal.
